If you want to follow popular trends you go with any of the boring options other people are suggesting. Pony play? Basic shock level kink. @kirk's suggestion is marginally better, but they're also what everyone tends to default to.

Tough one, especially when your partner's perceptive.

Well first of all, when you're preparing a surprise like that, you should make it seem like a normal date. Something you usually do. Don't ask them out and then take them to a hotel or something, that'll just give you away. But, for instance, if you usually have them over for dinner, use an excuse like that. Mask the true purpose of the date with something you have done before and would do again.

And then the basics, which would be not acting any differently, not laughing or giggling nervously when you're around them, and cover your tracks.
